Put courgette chunks in a jar, season it to taste (pepper, garlic, spices) and fill it with extra virgin olive oil. Put the lid on and leave to rest for 2-3 days. After that period, use it in your salads, sandwiches, pasta dishes or any of your favourite dishes.
