- 1 Kg UMAI ECO dehydrated aubergines.
- 4 tsp salt
- ½ cup chopped garlic
- ½ cup chopped parsley
- 1½ cup olive oil
Soak the UMAI aubergines in hot water for at least 15 minutes o until soft. When they’re cold add garlic and parsley, put the mixture in a glass jar and add the olive oil. Better eaten after being 24 hours in the jar, so they get the flavours from the garlic and the parsley.
